Arcos COLOUR-PROF filleting knife 7.5” 190mm made with a nitrum stainless steel blade and a polypropylene handle which gives greater comfort and is non hygroscopic (it doesn’t absorb liquids), it is also resistant to high temperatures and slippage.  It comes with six coloured clips so you can choose one to attach to the handle in order to be colour coded in accordance with HACCP.  This knife is ideal in the professional or domestic kitchen.
